Executive chef Simon Sperling, currently in Cebu, Philippines, photographed these decadent desserts, which he and his culinary staff have created. Simon grew up in Germany and started his career as an executive chef for Celebrity Cruise Lines in Miami. He went on to work in the Philippines, China and Malaysia, the Mediterranean, Africa, and the Middle East. He worked at the Anassa Resort in Cyprus and at the Oberoi’s Mena House, where he could see the pyramids from his window. He worked on the island of Mauritius, then in Saudi Arabia, Jeddah, where he was opening chef for the Waldorf Astoria Collection hotel, the Qasr Al Sharq, or Palace of the Orient.
